XXXIII: Simple & Hot

If we have our nasi lemak, the Taiwanese have their beef soup noodle. However, it turned out that there's this other dish which is more widely available than that. To be honest, I don't know what it is called but there is bound to be at least one shop selling it on every street. It's easily identifiable by a big pot or wok or clear soup with noodle in it. By the sides are assortments of side dishes, usually chopped up stewed pork and innards.

The shops are usually not well lit unless you step into those proper restaurants. Otherwise, it's like our kopitiam with one cooking and the other attending to customers.

The noodle is like Seremban noodle, tastes of rice. The soup is a light and clear broth. This is similar to Teochew porridge but with more flavor.
I actually do like this very much.

Fried pork and intestines were the shops signature dishes according to the waitress whom I suspect is the chef's wife who looks like the owner. Both of these weren't very salty but it pairs very well with the noodle. On its own, they are delicious but there's only that much of intestines you can consume without feeling a bit icky after awhile.

You should try this at least once when you're in town. Not this specific joint (because I also don't know where and what it's called) but any especially on cold nights.
