Thankful
- cleaning up some backlog which resulted in optimizing the process for future long term
- cooked a rather impressive dinner
- finished up my cucumber and half tub of yogurt

Learnt 
Recipes that call for deep frying tofu doesn't necessarily require lots of oil. Using firm tofu that's been cut into (somewhat) uniform cubes, roll and coat them in flour. Heat up some oil in a pan. Not necessarily so much so that the tofu be submerged. Just a layer of oil would do. This obviously takes more time since you need to flip them around but it feels healthier than deep frying them entirely.
Wait, wha.... what do you mean that that is deep frying?!??!!?!??
My entire life has been a lie of deep frying then.
